Abstract
The investigation was carried out to determine the reasons why the organs of cattle that are slaughtered in the Municipal Camal of the Pedernales Canton, Manabí Province, are confiscated, a study carried out in a period of 90 days, whose objective was to determine the pathologies relevant or affectations that these organs have so that they are not sold to the public supply, in the quantitative part it was proposed to determine the percentage and characteristics and types of the organs confiscated in bovines that are slaughtered in order to be commercialized. The materials used were: apron, control sheet, computer, printer, paper, and camera. The methods were deductive, analytical, direct, in order to determine the percentage of bovines slaughtered in the slaughterhouse, the instrument used It was a control sheet, which detailed the race, sex, age, the place where the livestock came from and the organs that were seized were recorded, in turn directly observing and classifying the number of organs that are confiscated due to considerable damage, Said requisition is carried out by the Veterinarian. The results obtained were: that 536 animals were slaughtered, in the three months, more male individuals were sacrificed with 82.84%, than females with 17.16%. The most slaughtered bovine breed was the Brahman breed with 40.12%. followed by the Holstein breed with 15.30%, the Creole is not considered a breed. The most seized organs are the liver, large intestine, lungs, udders and heads. And partially seized: Large intestine, liver, kidneys, lungs and stomach. The pathologies causing the seizure: abscesses, adhesions, lithiasis, hematomas, melanosis, cirrhosis, tuberculosis, emphysema, hemorrhage, nephritis, hydatidosis, mastitis, it concludes by expressing benevolent practices for animal management, health, and feeding, as well Improving the infrastructure of the Slaughtering Center, adequate transport of animals and laboratory equipment, more equipment to handle carcasses, all will allow optimizing processes and ensuring the quality of meat to be marketed
